Chocolate Cake Balls


Chocolate Cake Balls (Original Recipe)

1 3/4 cups Gluten Free Mama Almond Blend

2 cups sugar

3/4 cups good cocoa powder

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon kosher salt

1 cup buttermilk, shaken

1/2 cup vegetable oil

2 extra-large eggs, at room temperature

1 teaspoon pure vanilla extract

1 cup very hot water

Sift the flour, sugar , cocoa, baking soda , baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined. In another bowl, combine the buttermilk, oil, eggs , and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the hot water and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely. I dipped mine in dark and white chocolate.

Buffalo Chicken Pizza


This is possibly my favorite pizza. It's spicy, it's creamy, it has a crunch to it while maintaining a nice chewy bite. The best part for me is that it tastes great the next day, I am a huge fan of cold pizza. I hope you enjoy it!

Buffalo Chicken Pizza


1 Gluten Free Mama Pizza Crust mix prepared (or your favorite crust)

2 Chicken Breasts, thinly sliced and sauteed on high heat (you want them to get that nice crunchy brown look)

1/2 cup Buffalo Wing Sauce (I prefer Franks')

2 Celery Stalks sliced

1/2 cup (or so) of Ranch (I make my own using this recipe)

1 cup (plus 1/4 cup) Mozzarella Cheese

Prepare your crust according to the instructions. While your crust is baking, prepare the chicken and let it soak in the buffalo sauce. Spread on the ranch (I find it helps to let the crust cool slightly), Add the 1/4 cup of cheese over the ranch, then the celery, evenly space the chicken out , add the rest of the cheese and drizzle the a little bit of the remaining buffalo sauce over the pizza (omit this if you prefer a less spicy pizza) bake for 15-20 minutes at 400 degrees.

Dessert Pizza



I have wanted to make a dessert pizza for awhile, so I was excited when the hubster asked for one instead of a cake for his birthday. I used half a bag of Gluten Free Mama Pizza Crust mix, Nutella, Pecans, Dark Chocolate Chips and fresh Raspberries. I also topped each piece with a dollop of homemade whipped cream. It was awesome. Completely awesome, and delicious.

Chocolate Raspberry Dessert Pizza


½ bag of Gluten Free Mama Pizza Crust (I omitted the Italian seasoning and vinager, but followed the directions otherwise)

½ cup of Nutella

¼ cup chopped pecans

¼ dark chocolate chips

1 pint fresh raspberries

Bake the crust according to the directions. Spread the Nutella evenly over the crust, add the chocolate chips and pecans and let it bake again for a few minutes (just enough to start melting the chips). Remove from the oven and add the raspberries, best served warm.

Homemade Whipped Cream

1 cup heavy cream

1 teaspoon vanilla extract

1 tablespoon confectioners' sugar

In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.
